Levels' Best game and fish will either be wild or produced under Soil Association Certified Organic Standards.
Rabbit and pheasant will be wild game from a shoot on the Levels and Moors. Wild duck will also be included (see poultry for farmed Aylesbury duck) and venison is farmed to organic standards within the Levels.
With access to the Bristol Channel by the last surviving mud horse, shrimps and prawns are harvested at low tide. They are collected from nets positioned in the main channel about half a mile off the cost to the west of Bridgwater Bay. Sales of these tasty crustaceans are only for the Mud Horse Hut at Stolford.
Any Levels' Best game and fish is only available when in season.

Shrimps (cangon vulgaris) are the main catch from nets that a filled with the tide. Each day at low tide the mudhorse is taken out to carry back the catch from the nets. The by-catch can include sprats, whiting, bass, mullet and conger eels - depending on the time of year. | |
Sharpham Park (Deer) Street | |
Deer have existed inthe Park for over 800 years. Records show that in the 1500's, there were up to 400 Red and Fallow deer in the Park and today there are wild Roe Deer in the Park as well. Roger is restoring the original oak paling fence around a section of the park to re-establish the sharpham Red Deer Herd. | |
