When you buy Levels' Best lamb you can be sure that it has been raised to high animal welfare standards enjoying extensive grazing on the rich pastures of the Levels and Moors. The distinctive flavour of the lamb will depend on the specific British Isles native breed – the most popular being Dorset and Exmoor Horn, Dorset Down, Shetland and Suffolk.
Shetland and Suffolk sheep are important to the management of both the Shapwick Health and Steart Nature Reserves, managed by Natural England. The Steart Nature Reserve includes the salt marshes to the west of Bridgwater Bay. These muddy marshes are colonised by grasses and herbs such as Sea Lavender and Samphire that give the lamb a very distinctive colour, texture and flavour. These are Spring-born lambs so salt marsh lamb is a seasonal meat available from Autumn through to the New Year.
